It is a beautiful morning in the Ozarks. Very cool and foggy early but now, clear and sunny. A perfect day to make a pie. This is a request from my mom, so here is today’s recipe.
Lemon Ice Box Pie
Ingredients: 1 can Eagle Brand milk, 2 eggs – separated, 1/4-1/2 lemon juice, Nilla wafers
Combine the milk, 2 egg yolks and lemon juice. Beat egg whites until stiff and fold into lemon mixture. Line a pie plate with Nilla wafers to make a crust ( not only the bottom of the dish, but lean up the side too) and I always crush a few to fill in the gaps.
Pour mixture over wafers.
Bake in a preheated 350 degree oven for 15 minutes. Cool and refrigerate at least 2-3 hours.
It is very light, tart and creamy. I think you will enjoy it – easy to make and delicious to share with family and friends!
